Ginger Lime Chicken Bites

This recipe came from the Paleo Magazine that I subscribe to. Paleo Magazine has been a great resource for me as it has interesting articles, useful products, and awesome recipes. The following recipe had a great, bold flavor and I served it with a simple salad with some blackberries and walnuts.

Ingredients:

  • 3 boneless, skinless, chicken breasts, cubed
  • 1 TBSP coconut oil
  • Juice of 1 lime
  • 2 TBSP Coconut Aminos
  • 1 TBSP EVOO
  • 1 tsp freshly grated ginger
  • 1 garlic clove, minced
  • 1 TBSP raw honey
  • 1 tsp onion powder
  • chopped green onions, for garnish
  • sesame seeds, for garnish
Instructions:
  1. Mix the following ingredients in a small bowl and set aside for the sauce: lime juice, coconut aminos, EVOO, ginger, garlic, honey, onion powder
  2. Heat coconut oil in large skillet over medium-high heat. Add chicken and cook until it is beginning to brown
  3. Add sauce to skillet, reduce heat to low, and simmer uncovered for approx 5 minutes or until chicken is completely cooked and no longer pink
  4. Top chicken bites with green onions and sesame seeds
