German Apple Pancakes

These German Apple Pancakes are so good! I cannot take a lick of credit for them, although I did cut the recipe down tremendously and cooked them in ramekins so I could eat them all week long :) HERE is the original recipe.

Makes 4 servings
Ingredients:

    • 3 eggs
    • 1/2 cup Almond Milk
    • 1.5 Tbsp Coconut Oil, melted
    • 1 tsp vanilla
    • 1 tsp pure maple syrup
    • 1/8 cup coconut flour
    • 1/4 tsp baking soda
    • pinch of Nutmeg
    • 1 apple, cored and diced
    • 1 Tbsp coconut oil
    • 1 Tbsp Raw honey
    • 1/2 tsp cinnamon
    • 1/2 tsp nutmeg
    • Juice of 1/4 lemon
Preparation
  • Preheat oven to 425 degrees
  • In a large bowl, whisk eggs, almond milk, coconut oil, vanilla, and syrup
  • In a small bowl, stir coconut flour, nutmeg, and baking soda
  • Mix dry ingredients into wet ingredients and beat well to combine, set aside while preparing the apples
  • In a small frying pan, heat 1 Tbsp coconut oil and honey
  • Stir in cinnamon, nutmeg and lemon juice
  • Add apples and coat with mixture
  • Divide apple mixture between 4 ramekins greased with coconut oil
  • Divide egg mixture on top of apple mixture in the 4 ramekins
  • Place ramekins on a baking sheet and bake for 25-30 minutes until done
